Basil is, of course, a trademark ingredient of the classic New York-style pie served at Famous Ray’s Pizza. This herb has numerous benefits beyond its unmistakable flavor. The flavonoids in basil offer protection to the body’s cells. In particular, the flavonoids orientin and vicenin have been shown in studies to protect chromosomes from radiation. The volatile oils of basil are associated with reduced bacterial growth. In fact, essential oil derived from basil has been used to inhibit certain pathogens resistant to antibiotics.

Basil is also recognized for its anti-inflammatory properties. Studies have shown the component eugenol, found in basil’s volatile oil, is capable of blocking the enzyme cyclooxygenase. Commonly used anti-inflammatory medications such as acetaminophen, ibuprofen, and aspirin work to inhibit the same enzyme. Basil is considered beneficial to those suffering from rheumatoid arthritis or other inflammatory issues.

Fresh basil is used daily at Famous Ray’s Pizza of Verona, New Jersey.
